Refreshing Quinoa Power Salad
Ingredients
1/2 cup dry quinoa cooked to instructions in 1 cup water to yield 1 1/2 cups cooked quinoa
2 celery stalks chopped
3 small carrots chopped
Fresh juice of 1/2 Lemon & 1/2 lime
2 scallions chopped
1/2 cup pistachios nuts
3 mini cucumbers
2 small garden fresh tomatoes
1 avocado
1 1/2 cups baby kale
3-4 fresh mint sprigs
1/4 cup champagne vinegar
Pinch each of Tellicherry Pepper & Himalayan salt
About 2 Large or 4 small servings.
Cook quinoa and set aside.
Chop veggies and add to quinoa
squeeze juice from lemon and lime
add champagne vinegar, salt and pepper to taste
Spoon quinoa and veggies over baby kale
Add pistachios, mint, avocado
