Hibiscus Iced Tea
Ingredients:
8 cups filtered water
6 hibiscus tea bags
3-4 fresh mint sprigs
2-3 lemons
2 large pieces fresh ginger root, peeled
ice cubes
8 cups filtered water to dilute
Instructions:
Bring 8 cups of filled water to boil and add 6 tea bags, the fresh mint, ginger root, the juice of 2 lemons, and the skin of one lemon
Turn off heat and brew for 6-8 minutes. Remove teabags.
Cool at room temperature about 1 hour then in refrigerator til very cold.
Strain to store the concentrated iced tea.
To serve add equal parts water to hibiscus concentrate, lots of ice, and lemon juice to desired taste.
Garnish with mint leaf and small lemon wedge.
Note: This is for party size yield of about 3-4 quarts. You can store the concentrated iced tea and dilute and garnish for individual servings.
