Tahini Egg Salad
Ingredients: serves 2
4 hard boiled eggs
1 Tablespoon Tahini
1-2 Cups chopped fresh spinach
2-3 fresh basil leaves
juice of half lemon
1 cup cherry tomatoes cut into quarters
1-2 Tablespoons nutritional yeast
salt & pepper to taste
Mary’s Gone herb crackers
Instructions:
Cook, peel and chop/mash 4 hard boiled eggs
Add to bowl with spinach, basil, tomatoes, tahini, lemon juice, nutritional yeast, s & p - Mix and mash well
Serve with Mary’s Gone herb crackers
Optional: Serve with avocado and fruit
Optional: serve on bread of choice
